many years I was fed up eating bland beef bought from various
retailers.
The retailers couldn’t tell me much about the beef I was buying,
what breed or the farm it came from?
Then I started rearing Highland cattle. |

Highland
cattle are primarily a beef breed. They produce a fine textured beef
with a distinctive flavour, beef for the connoisseur and the gourmet.
Highland beef can be described as the “Grand Cru”, the “premium growth”
of beef, with, we trust, a flavour to match that of a fine wine.
Patience is required to wait for the animal to grow and mature at its own speed. Because the cattle are outside all year, they are effectively “free range” within the boundary of their fields. They do not spend the winter months inside cattle sheds. |

Highland
beef may be considered rare.
Highland cattle comprise less than 1% of all the beef cattle in the UK. Upper Robieston regularly has Highland bullocks ready for the butcher. Why

boxes comprising equal weights of fore end and rear end cuts.
